Allows you to add information into the metadata that does not fall within existing metadata template. A customizable field will allow you to add additional information that is relevant to your organization/ workflow.
When was the last time you were affected by this lack of functionality, or specific tool?
Every day. Some of the information we want to attach to an image does not fall within the existing fields. This can have many applications for other users- For me, it would allow a more seamless workflow as our systems could automate extracting that information and use it to assign images to relevant records.

Substituting existing fields for other uses. The problem is, everyone within the organization has to understand and adhere to the same format. Where, if there was a customizable field, we could create a custom preset that everyone can use.

What you are requesting is custom metadata fields – but NOT IPTC. IPTC is a standard that defines specific fields.
