Just wondering still no IPTC Extensions like "Person Shown", "Additional Model Information", "Artwork" etc.. Specially I wonder why there are no Model Infos, as Capture One aims for Fashion and Portrait shootings.

I would love to see some IPTC extensions such as Artwork / Object Name, Inventory Number and similar Cultural Heritage related fields included in Capture One some day. Currently we need to do this with Bridge, which is a showstopper in our Capture One based workflow.
The lack of "Additional Model Info" is a major headache on just about every ad shoot, as well, where agencies almost always specify its use in delivery metadata requirements.
I would add that Capture One metadata implementation is subpar. Limited support for IPTC in legacy version from 20 years ago? For photographs who need to input detailed information about content of each photo it is inconvenient to do round trips to Bridge, Photo Mechanic or other program that has proper metadata workflow and implementation of standards. Also adding xmp files for files like TIFF is complete nonsense. No other program I used ever reads sidecar for this types of files. I need to export TIFF files each time original location and override when I need metadata to be read by other software. It’s nonsense.
